OMG! This Asian maifun chicken salad is seriously delicious. This salad is perfect for a light meal, is so refreshing and combines all of the best Asian flavors we know and love. You need to try this!
Ingredients:
3 chicken breasts
1 head of lettuce (shredded)
3 green onions (cut diagonally)
1 c. chopped carrots
1 c. celery
1/2 c. cilantro
2 tbsp. sesame seeds
2 tbsp. toasted almonds (optional)
rice sticks (add however much you want)
Dressing:
2 tbsp. sugar
1 tbsp. salt
1/2 tsp. black pepper
1/2 c. salad oil
1 tsp. ginger
1 tbsp. vinegar
1 tbsp. sesame oil
- Boil the chicken with carrots and celery until cooked through. Let cool. Shred into very small pieces with your fingers and add ginger. Set aside.
- Shred lettuce into small bites. Add the green onions, toasted almonds, sesame seeds, cilantro and chicken. Toss together.
- In a pot over high heat, bring 3 to 4 quarts water to a boil. Add rice noodles and stir to separate; cook 2 to 3 minutes. Drain and add to salad.
- Combine all dressing ingredients together and stir. Pour over salad and toss just before serving.
